Does anyone know if it is the law that if you pay the proposed rent increase after the correct notice has been given that becomes your new rent, whether you signed anything or not? Can you point me in the right direction to see this written in the law?

I think that there is case law about this, but youd have to google it.
Paying the increased rent is recognised as acceptance and is legally binding the GOV website has the information your looking for.
