When a tenancy become periodic, what is the process to switch it back to fixed with the same tenants?
Do I need to cancel the tenancy and start all over with new contracts, or is it directly supported within the openrent system?

I would suggest you keave it periodic. The terms are the same and its better for you.

Other ways of creating a tenancy agreement are available 
Assuming your existing tenancy was signed up via Openrent, it is supported by Openrent. Log into your tenancy, and view ‘end of tenancy’ options.
